The risotto originally comes from Italy and can be combined with various ingredients, such as meat, seafood or mushrooms. An interesting variant is the
black risotto with cuttlefish, which, in addition to its excellent taste, is certainly eye-catching due to its unusual color. The cuttlefish is known for its
black ink, which is the main ingredient for this delicious dish. The intense taste will
delight lovers of fish specialties.

- approx. 500 g cleaned cuttlefish
- 4 cuttlefish inks (4 g)
- 1¼ fish stock
- 60g onions
- 2-3 cloves of garlic
- 40 g butter
- 280 g Risotto-rice
- 200 ml white wine
- 3 sprigs of parsley
- 3 tbsp olive oil
- salt
- pepper
Preparation:
First
clean the cuttlefish, cut it into strips, rinse under running water and then drain.
Chop the onions and garlic. In the meantime, heat some olive oil in a pan. Sauté the onions and garlic and season with salt and pepper. Then add the cuttlefish strips and sauté for 5 minutes. Deglaze with
white wine and add tomato paste. Simmer over low heat for about 20 minutes.
Steam rice in a pot with a little olive oil. Heat the fish stock and add it. The rice should be cooked
creamy but al dente. Once the rice is cooked, add the cuttlefish and cuttlefish ink. Taste and season with salt and pepper if necessary.
Chop the parsley and add a teaspoon of butter. Finally, remove from heat and let it
rest for a few minutes before serving the dish on the plates. At the end, you can add some
parmesan cheese.
